Carrot & Apple muffins! OH MY!!!

These are another recipe from The body coach, super simple, super healthy and super delicious!

Here’s what you will need for about 10:

  • 2 medium carrots
  • 2 medium apples
  • 100g ground almonds
  • 60g raisins
  • 1 1/2 tbs mixed spice
  • 1 tbs ground cinnamon
  • 1 tbs baking powder
  • 75g ricota
  • 3 eggs
  • 2 tbs vanilla extract
  • 125g cream cheese
  • 2 tbs honey

How to make it? Simple:

  1. Preheat the oven at 180 and line a 12 hole muffin tin with muffin cases (I used silicon ones)
  2. Mix all the ingredients (apart from 1 tbs of vanilla extract,the cream cheese and the honey) in a bowl until well combined
  3. Divide the mixture on the muffin cases. Bake for 25 minutes. Leave it to cool.
  4. While the muffins are cooling , whip together the remaining vanilla, cream cheese and honey and when the muffins are completly cool spread the cream cheese on top.

DONE!
