The dish contains lentils, chicken and chorizo providing high protein so this is particularly good to have prepared and ready to heat after a workout or for our growing children. Lentils are a good source of iron and potassium, are low in fat and fairly high in fibre. Eat lentils with rice or millet to make a complete protein source containing all the amino acids needed by the body!
I love to double up and make extra which can go into the freezer for another day when I don’t have time or energy to cook…
