Wednesday Recipe: Cacao and Hazelnut cookies!

Oh I haven’t baked in a long time so last week I thought I try something new. After looking through books and books I found this recipe for these very easy and healthy cookies ! Oh boy they are soooo soooo delicious. They did not last long I  must tell you 😬they are just perfect with a cup of coffee or tea or juice or with nothing really 😂 ! I got my little helper as always to help . Even if I don’t call her to help it’s like she knows what I am about to do and just rocks up in the kitchen and says ‘ can I help please?’ How can I say no 🙂

So here’s the recipe :

  • 1/2 (80g) pitted dates
  • 2 cups (200g) ground hazelnuts
  • 1 1/2 cups (225g)wholemeal flour
  • 1/4 cup (50g) chia seeds
  • 1 teaspoon ground cinnamon
  • pinch sea salt flakes
  • 1/4 cup (50g) coconut oil, at room temperature
  • 1/2 cup (170g) rice malt syrup (I used Golden syrup)
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1/2 cup (50g) cacao nibs

How to make it:

  1. Preheat the oven to 160 degrees/325F. Line two oven trays with parchment paper
  2. Place dates in a small heatproof bowl, cover with boiling water, stand for 5 minutes. Drain.
  3. Process the dates, ground hazelnuts, flour, seeds, cinnamon, salt, oil, syrup, egg and extract until well combined. Stir in the cacao nibs .
  4. Using damp hands, roll 2 tablespoons of the mixture into a ball, place on the tray, flatten with the palm of your hand into a 6cm(2 1/2 inch) round. Using the back of a damp fork mark the cookies.
  5. Bake for 15 minutes or until a cookie can gently be pushed without breaking.

Wait pantiently 🙂

Cool cookies on trays.

Hope you enjoy it!

Tuesday flower

Good morning all!

Ah spring is back finally and Switzerland is blooming with flowers every corner I turn! I should say that we had snow last week tho and looks like we will have it again this week which is slightly annoying only because I got in the spring mood and planted some flowers myself , so now I worry that the snow will ruin my little bit of gardening. We shall wait and see and hope for the best.

Tulips are one of my favorite flowers, specially these pointy looking ones. Next year I will try and plant some of these myself.

So this is the flower I choose mm for this week 🙂

Have a nice week everyone!

52 weeks photo challenge:week 31 – empty space

I am not even sure how to start this post after so long without posting anything or writing anything..

A lot has happen in the last month or so..

We moved house, the kiddies moved nurseries, I had my first job as a photographer, which I am so grateful for and still can’t believe it happen. We had so much on and to be honest still do, but things are settling into place now and we are now starting to get back to our routine.

These two photos are the view from our windows on the top floor of our new house! Not bad hey? Not bad at all… It’s details like this that makes it all worth it in the end .

So now back to our challenge. I apolosise again for my very long absence and to get back to it I choose the theme ’empty space’. In photography ’empty space’ is referred as ‘negative space’ . Negative space is the area that surrounds the main subject in your photo and occupies most of the photo.

Here’s what to do :

1-Create a post entitled 52 weeks photo challenge:week-Theme

2-Create a ping back to this page or leave a link to your post in the comments box

3-Tag the post ’52 weeks’

Hope too see your entries .

I will come back soon

Dear follower/blogger

I apologize for my absence !

Lots of things have been happening so I have decided to take a break to deal with it all!

I will comeback soon with a new theme.

In the mean time have a great week .
