Wednesday Recipe: Cacao and Hazelnut cookies!


Oh I haven’t baked in a long time so last week I thought I try something new. After looking through books and books I found this recipe for these very easy and healthy cookies ! Oh boy they are soooo soooo delicious. They did not last long I  must tell you 😬they are just perfect with a cup of coffee or tea or juice or with nothing really 😂 ! I got my little helper as always to help . Even if I don’t call her to help it’s like she knows what I am about to do and just rocks up in the kitchen and says ‘ can I help please?’ How can I say no 🙂

So here’s the recipe :


  • 1/2 (80g) pitted dates
  • 2 cups (200g) ground hazelnuts
  • 1 1/2 cups (225g)wholemeal flour
  • 1/4 cup (50g) chia seeds
  • 1 teaspoon ground cinnamon
  • pinch sea salt flakes
  • 1/4 cup (50g) coconut oil, at room temperature
  • 1/2 cup (170g) rice malt syrup (I used Golden syrup)
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1/2 cup (50g) cacao nibs

How to make it:

  1. Preheat the oven to 160 degrees/325F. Line two oven trays with parchment paper
  2. Place dates in a small heatproof bowl, cover with boiling water, stand for 5 minutes. Drain.
  3. Process the dates,ground hazelnuts,flour,seeds, cinnamon, salt, oil, syrup, egg and extract until well combined. Stir in the cacao nibs .
  4. Using damp hands, roll 2 tablespoons of the mixture into a ball, place on the tray, flatten with the palm of your hand into a 6cm(2 1/2 inch) round. Using the back of a damp fork mark the cookies.
  5. Bake for 15 minutes or until a cookie can gently be pushed without breaking.

Wednesday Recipe!

I havn’t been very active on the ‘wednesday recipe’ lately I know. Simply because I havn’t been baking as much. But santa give me a new recipe book and I promissed to try and bake every recipe from it ! Let’s see how that goes 😂

So I started with this one! Hot Cross Buns!

This is my second try at it . On sunday I baked some and I am pretty sure no one would even look at them twice ! I’ve missread the oven temperatures and they burned… Bad! 😂

But you learn from your mistakes right?

So these were baked yesterday and they look yummy!Ok maybe they don’t look how hot cross buns should look but trust me when I say they taste amazing!

This recipe belongs to one of my favourite bakers ever! Mary Berry! Google her! You shall find amazing recipes!

So here’s what you will need:

  • 450g white flour
  • 1 tsp salt
  • 1 tsp mixed spice
  • 1 tsp ground cinnamon
  • 1/2 tbs freshly grated nutmeg
  • 7g fast action yeast
  • 50g caster sugar
  • 50g butter melted,cooled
  • 150ml tepid milk
  • 5tbsp tepid water
  • 1 large egg, beaten
  • 75g currants
  • 2 baking sheets

For the glazing:

  • 2 tbsp granulated sugar
  • 2 tbsp water

How to :

  1. Lightly grease the baking sheets
  2. Measurethe flour,salt,spices,yeast and sugar in a bowl and mix.Make a hole in the centre and pour in the melted butter,milk,water and egg,then add the currants.
  3. mix to a soft dough and knead for about 10m on a floured surface.Transfer to an oiled bowl and cover with clingfilm.Let it rito to double the size,about 1h30 in a warm room.
  4. Move the dough to a floured surface and knead for another 2-3 minutes. Divide the dough in 12 equal parts and shape each to a round bun.Make a cross on the top of each bunwith a knife and place them on the baking sheetscovered with clingfil. Let it rise again for another 30minutes.Preheat the oven to 220, 200 fan,gas 7.
  5. Bake the buns for about 15minutes until brown.While the buns are baking dissolve the sugar in the water over a gentle heat.As soon as the buns come out the oven brush them with the glaze.

There you are! Beautiful yummy buns!

Carrot & Apple muffins! OH MY!!!

These are another recipe from The body coach, super simple, super healthy and super delicious!

Here’s what you will need for about 10:

  • 2 medium carrots
  • 2 medium apples
  • 100g ground almonds
  • 60g raisins
  • 1 1/2 tbs mixed spice
  • 1 tbs ground cinnamon
  • 1 tbs baking powder
  • 75g ricota
  • 3 eggs
  • 2 tbs vanilla extract
  • 125g cream cheese
  • 2 tbs honey

How to make it? Simple:

  1. Preheat the oven at 180 and line a 12 hole muffin tin with muffin cases (I used silicon ones)
  2. Mix all the ingredients (apart from 1 tbs of vanilla extract,the cream cheese and the honey) in a bowl until well combined
  3. Divide the mixture on the muffin cases. Bake for 25 minutes. Leave it to cool.
  4. While the muffins are cooling , whip together the remaining vanilla, cream cheese and honey and when the muffins are completly cool spread the cream cheese on top.

Wednesday recipe!


Today recipe is bread! Just simple, quick to make, yummy bread!

I love homemade bread and I actually bake it quite often,specially when I make soup as we all love to dip the bread in it!

So take a look at this recipe and tell it’s not the easiest thing ever!

What you will nedd:

  • 1½ cups warm water
  • 1 tablespoon honey
  • 1½ teaspoons salt
  • 1 tablespoons Active Dry Yeast
  • 3½ – 4½ cups flour

How to make it:

  1. Mix water, honey, salt and yeast. Let sit for 5-10 mins until there is a foam on top.
  2. Mix in flour until  it dosn’t stick anymore.
  3. Cover with a tea towel and let it rest for 20 mins. preheat the oven at 400(200 degrees celsius)
  4.  Bake for 15-20 mins.

I have found this recipe here and I use it all the time! I also mix to the dough some herbs and for this one I used thyme. It compliments it really well 🙂

Wednesday Recipe!


This is called Spanish Omelette with Dill & Sweet potato !

Is it easy to make? Extremely easy 🙂

What you will need: serves 4

  1. 200g sweet potato thinly sliced
  2. 2 tbs olive oil
  3. 6 eggs
  4. 30g red pepper without the seeds and cut into strips
  5. 2 tbs finely chopped dill
  6. pinch of salt

How to do it:

  • Preheat the oven to 170 degrees
  • Put the potatoes in a tray,drizzle with the oil and bake for 20 minutes. Leave the oven on after these are ready
  • Beat the eggs in a large bowl and add the sweet potato slices,pepper,dill and the salt
  • Coat a non stick oven prof frying pan evenly with oil. Heat over low heat and add the egg mixture and cook.When the eggs have set to about 5mm from the edge of the pan tranfer the frying pan to the oven and cook 15-20 minutes
  • Serve with salad

Wednesday recipe!


This my friends is Amazing food on a plate! Prawn and chilli tagliatelle!

So delicious, easy and quick to make and very healthy!

What you will need : serves 1

  1. 75g tagliatelle
  2. 3 broccoli little trees
  3. 1/2 tbs coconut oil
  4. 3 spring onions finely sliced
  5. 1/2 tbs chilly flakes
  6. 4 cherry tomatoes, halved
  7. 1 garlic clove chopped
  8. 240g of king prawns peeled
  9. salt and pepper to taste
  10. juice of 1 lemon
  11. 3 mushrooms

How to make it:

Cook the tagliatelle in a large sause pan with boiling water for about 12 minutes or follow package instructions. About 2 minutes before the time is up add the broccoli and continue to cook.

While the pasta is cooking fry the sping onion on the coconut oil with the chilli flakes, mushrooms,tomatoes and garlic for about 1-2 minutes .

Mix in the praws and cook for about 2 minutes or until the prawns are deep pink.

Turn off the heat and mix in the pasta and broccoli, add salt and pepper and toss it all together . Squeeze in the lemon juice and you are good to go!

Breakfast is one of the most important meals of the day and sometimes it can be quite boring to have always toast or cereals or yougurt so I looked for something different to try! I have been following “The Body Coach ” and I love his breakfast recipes! This is one I have tried this week and OMG I am in love! It’s so tasty and easy to make and it sets you up for the day!

It’s called Cinnamon French Toast!

Here’s what you will need :

  • 1 egg
  • 1/4 tbs ground cinnamon
  • 1 tbs vanilla extract
  • 1 or 2 slices of white bread, crusts removed
  • 1/2 tbsp coconut oil
  • 1 banana,sliced,to served and other fruits to taste
  • maple syrup

how to make it:

Separate the white from the yolk of the egg. Add the cinnamon and the vanilla to the yolk and combine.

Wisk the white until it becomes light and frothy.Mix it with the yolk mixture until combined.

Dip the bread into the mixture, turning it a couple of times. Let the bread sink in to absorve  as much of the mixture as possible .

Melt the coconut oil in a pan over medium heat . Fry the bread for about 2 minutes each side.Make sure it dosn’t burn.

Serve with the sliced bananas and other fruits and top it up with the syrup!

Lemon Cake!!! Look at it! It’s just delicious!

This cake is by a very famous english lady called Mary Berry . I absolutely love her recipies !

Here’s what you will need:

  • 225g (8 oz) butter , softened
  • 225g (8 oz) caster sugar
  • 275g (10 oz) self-raising flour
  • 2 teaspoons baking powder
  • 4 eggs
  • 4 tablespoons milk
  • finely grated rind of 2 lemons

How to do it:

 1.Grease a tin and then line with paper, pushing it neatly into the corners of the tin. Pre-heat the oven to 160°C/325°F/Gas 

2.Measure all the ingredients for the traybake into a large bowl and beat well for about 2 minutes until well blended, an electric mixer is best for this but of course you can also beat by hand with a wooden spoon. Turn the mixture into the prepared tin, scraping the sides of the bowl with a plastic spatula to remove all of the mixture. Level the top gently with the back of the spatula.

3.Bake in the middle of the pre-heated oven for about 35-40 minutes or until the traybake springs back when pressed lightly with a finger in the centre and is beginning to shrink away from the sides of the tin.

4.Allow the traybake to cool in the tin for a few minutes then lift the traybake out of the tin still in the lining paper. Carefully remove the paper and put the traybake onto a wire rack placed over a tray (to catch drips of the topping).

Done! Very simple and easy and so so nice!
