It’s not goodbye !

My dear dear bloggers, just a quick message to let you know that in the next two Mondays there won’t be a 52 week challenge! 

No I am not saying goodbye I am just going on a two week HOLIDAY!!!!! Whoo whoo!! 

We will be traveling on Monday to my country, Portugal! It’s been 5 years since I’ve visit last and this time I am going somewhere I have never been, although I lived there for the first 26 years of my life! We are going to the Algarve and only I know how excited I am specially because of the food!! 😋 

Also my husband never been to Portugal neither have my children and also is our first ‘proper’ holiday as a family so yes I am really looking forward to it! 

So it’s time to pack and check in online!

52 weeks photo challenge: week 34- movement 

Another week’s gone by and we are back again to a new theme ! We had a busy week over the Homewood’s  house and had lots of fun too! So I’ve chosen the theme ‘ movement’ to mark the week! 

You can either use blurred motion ( using low shutter speed) or freeze movement by setting the camera to a fast shutter speed . With my children I usually use a very fast one but I am thinking of experimenting with slow and see what comes out of it 😊

52 Weeks Photo Challenge:Week 33 – Rain

I swear it’s been rainning in here for say, oh i dont’t , Years!!?? Don’t get me wrong I do like rain, and as my husbands grandad used to say “rain is good for the grass”, and indeed it is but enough is enough!

But oh well, it is here and might as well make the most of it and take some photos yes?!

So this week’s theme is RAIN!

These photos were all taken in my garden and I must say its look quite pretty after the rain fall !:)

Wednesday Recipe: Cacao and Hazelnut cookies!

Oh I haven’t baked in a long time so last week I thought I try something new. After looking through books and books I found this recipe for these very easy and healthy cookies ! Oh boy they are soooo soooo delicious. They did not last long I  must tell you 😬they are just perfect with a cup of coffee or tea or juice or with nothing really 😂 ! I got my little helper as always to help . Even if I don’t call her to help it’s like she knows what I am about to do and just rocks up in the kitchen and says ‘ can I help please?’ How can I say no 🙂

So here’s the recipe :

Ingredients:

  • 1/2 (80g) pitted dates
  • 2 cups (200g) ground hazelnuts
  • 1 1/2 cups (225g)wholemeal flour
  • 1/4 cup (50g) chia seeds
  • 1 teaspoon ground cinnamon
  • pinch sea salt flakes
  • 1/4 cup (50g) coconut oil, at room temperature
  • 1/2 cup (170g) rice malt syrup (I used Golden syrup)
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1/2 cup (50g) cacao nibs

How to make it:

  1. Preheat the oven to 160 degrees/325F. Line two oven trays with parchment paper
  2. Place dates in a small heatproof bowl, cover with boiling water, stand for 5 minutes. Drain.
  3. Process the dates,ground hazelnuts,flour,seeds, cinnamon, salt, oil, syrup, egg and extract until well combined. Stir in the cacao nibs .
  4. Using damp hands, roll 2 tablespoons of the mixture into a ball, place on the tray, flatten with the palm of your hand into a 6cm(2 1/2 inch) round. Using the back of a damp fork mark the cookies.
  5. Bake for 15 minutes or until a cookie can gently be pushed without breaking.

52 Weeks Photo Challenge:Week 29th- beautiful colors

These were taken this past weekend in Montreux where we went to celebrate our first wedding anniversary 🙂 I was mesmerized by the beautiful colors in most streets! The town as just wonderful ! So Beautiful! And that sunset view from our bedroom window… well … that was just something else all together !
